scones : I made these cornbread scones earlier this week. They were delicious, especially covered in butter. Here is the recipe from Better Homes and Gardens...
Ingredients
2 cups all-purpose flour
1 cup yellow cornmeal
2 Tbsp. granulated sugar
1-1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup cold butter
1 cup buttermilk

Directions
1. Preheat oven to 425 degrees F. In large bowl whisk together flour and cornmeal.

2. Cut cubed butter into flour mixture with pastry blender until it resembles coarse crumbs. Make well in center of flour-butter mixture. Add 1 cup buttermilk; stir with spoon until moistened. Do not overmix. (If dough appears dry, add 1 to 2 tablespoons additional buttermilk.)
3. Turn dough out onto floured surface. Gently knead by lifting and folding dough, 4 or 5 times, giving a quarter turn after each knead. Roll into 8-inch square, 3/4 inch thick. Cut into 1-1/2- to 2-inch squares. Place squares 1 inch apart on ungreased baking sheet. Brush with buttermilk; sprinkle coarse sugar. Bake 12 to 15 minutes or until lightly browned; cool scones on a rack. Serve warm. Makes 16 to 25 scones.
sandies : I made some more lemon cornmeal sandies. (And yes, I was on a cornmeal kick this week!)
salsa : Michael frequently makes salsa. His is delicious, so I have never tried to make any. However, this week I found a recipe for green salsa. I made it on Friday. It was so easy and the smell in the kitchen was intoxicating. I have eaten some with every meal since. Seriously. Here are the veggies waiting to be broiled in the oven...
And here is the result (in a salsa bowl from my favorite Mexican restaurant)...smoothie : I also found a recipe for a Carrot Ginger Smoothie. I am enjoying one right now. And the kids love it too!
sewing : Ok, so sewing isn't food. But it does start with the letter s and I have been doing a lot of it today, so I had to throw it in. You will see the results of it soon...
